Bread vs. Cake? This recipe is far from most, the best pumpkin bread I have ever eaten. It’s super moist and just melts in your mouth. But here is the key to success in preparing this well-deserved dessert, sugar and cinnamon are the two ingredients you don’t want to skip out on. Okay are you ready?
Ingredients:
5 eggs
1 1/4 cups vegetable oil (I use crisco)
1 can (15 ounces) solid-pack pumpkin
2 cups all purpose flour
2 cups sugar
2 packages (3 ounce box) cook and serve vanilla pudding
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
Preheat oven to 325 degrees
In large mixing bowl, combine all eggs. Add oil and pumpkin, mix until smooth. Combine remaining ingredients and mix well until smooth.
IMPORTANT PART: swipe baking pan with vegetable oil and mix equal amount of sugar and cinnamon making sure all sides are covered. Pour batter in greased pans then apply more sugar and cinnamon mixture over top of bread batter. Bake for 30-40 minutes until center of bread comes clean from toothpick insertion. Cool for 10 minutes before removing from pans.
Now if you want to add some extra calories, take softened cream cheese and smear on a slice of the bread. So yummy! I hope you enjoy this recipe
